Colombia Finca Villa don Juan Gesha Honey

This gesha contains many delicate layers; possessing all the classic notes of a tea bodied, flower forward cup, highlighted with a touch of fruit sweetness to accentuate the complexity.  The farm is kept in the shady hills, allowing Gomez to cultivate his crop of the Panamanian Gesha that can be more sensitive to sunlight; they use a 72 hour fermentation process where the coffees are kept under anaerobic conditions and innoculated with natural yeasts to deepen their flavors.
